One of my favorite things to make in the slow cooker is beef curry.

I love the way the beef comes out so tender and the way the curry flavor permeates the meat.

I also love the fact that I can put everything in the slow cooker and let it do its magic.

I have tried many different recipes for beef curry in the slow cooker and I have found that they can be a bit hit or miss.

Some recipes are too watery and some are too dry.

Some recipes have too much curry paste and some have too little.

I have finally found a recipe that I think is just right.

I am going to share with you my recipe for slow-cooked beef curry.

1 lb beef stew meat
1 can tomatoes
1 can coconut milk
1/2 cup beef broth
1/2 cup brown rice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon curry paste
1/4 teaspoon red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley
1/4 teaspoon dried thyme


1. In a slow cooker, combine all ingredients except for the rice.

2 onions, cut into chunks
3 garlic cloves, peeled and left whole
4 tbsp sunflower oil
800g/1lb 12oz beef braising steak, cut into 2.5cm/1in pieces
2 tsp ground cumin
2 tsp ground coriander
2 tsp garam masala
200g/7oz natural yoghurt
200g/7oz cooked potatoes, cut into chunks (about 2 handfuls)

1. In a food processor, pulse the onions and garlic until they are finely chopped.

2. Heat half of the oil in a frying pan and fry the onion and garlic for 10 minutes over a medium heat.

3. Put the beef in a bowl and add the spices.

Stir well to coat the beef, then leave to marinate for 30 minutes.


– Thai-Style Slow Cooked Beef Massaman Curry

This Massaman curry paste is full of rich and fragrant flavors.

A little bit of heat, a little bit of sweet and a whole lot of yum.

Using a slow cooker to simmer away all those beautiful flavors in this Thai-style beef Massaman curry makes for the most delicious and easiest curry you’ll ever taste.

By gradually increasing the amount of curry paste you add to the slow cooker, you can control the flavor and heat of your curry.

I like to add 2 tablespoons of paste to mine but you may prefer more or less.
